Winter squash soup is a smell you want to come home to. I was able to source almost all of these ingredients from Amish and organic farms from within a few miles from my house here in Pennsylvania at the end of September. Herbs are important here so if you’re growing your own, you’re in good shape because the more the merrier!
Yes! You CAN save the bones from a roasted chicken and make a delicious stock. The gist: roasted bones from last night’s chicken. Onion. Celery. Carrot. Thyme. Bay leaf. Water to cover plus a bit more. Boil. Simmer. 2 hours later, strain.
